@Brian.Dean--You can still get a lot of benefits out of a traditionally-architected application running on IaaS, even if it's not a cloud-optimized deployment.  In fact, that's really what a lot of applications running on IaaS are (look at how many people are still using relational databases, which really don't fit all that well into true cloud architectures).  But the benefits you'll get are significantly less than what's possible to get--you'll get the automated launch, and you can get the security benefit, but you don't get the scalability/speed or the fault-tolerance.
